Do you ever have those days where being an adult is just really hard? Ugh, me, too. I had all of these grand plans for last week. I took time to write and organize all the to-do’s in my planner. I numbered the tasks in the order that I needed to complete them and just like that . LIFE HAPPENED… and nothing got done. Cue the “wa wa wa” sound effect.
“Adulting” can be hard.
I forgot to get bread this week and I was at the grocery store four times. FOUR TIMES. Why brain? Why? How could you be so forgetful? I need a vacation from adult responsibilities. Yeah, an “adulting” vacay. Is that a thing? If it’s not, it should be.
I’m not an obsessive bread eater, but we’ve been out for weeks and you’d think it would be at the top of my list… but no… I forgot to write it on my grocery list- obviously my first mistake. And, of course, because, I forgot to write it down, I did not think to get it at the store- a vicious cycle really. Thank goodness, I have been working on this Whole Wheat Bread recipe otherwise we would certainly be bread-less until, well, probably forever.
*DING* Oh, that’s my oven timer. One second while I pull this fresh, incredibly delicious, perfectly textured, plant-based, whole wheat bread loaf from the oven. Mmmmmm, the smell of fresh bread? Uh, duh, who doesn’t, right? It’s like home, home sweet home. What could be more comforting that your momma’s kitchen? I wish I could package up this smell and send through my computer screen to you because you are seriously missing out.
I’d like to also mention that this recipe is knock-your-socks-off simple and DEEEE-licious. If you have 1 hour and these 6 ingredients, you are in business. Just think a little measuring, some mixing, rising and baking (the last two you can walk away for) will leave you with a fresh, chewy, loaf of Plant-Based, Whole Wheat Bread. Forgot to get bread at the grocery store this week? Ugh, me, too. This Plant-Based, Whole Wheat Bread recipe is knock-your-socks-off simple and absolutely DEEEE-licious. If you have 1 hour and these 6 ingredients, you are in business.
- 3 3/4 cups Whole Wheat Flour
- 1/2 tsp. Salt
- 3 tbsp. Brown Sugar
- 2 1/4 tsp. Active Dry Yeast
- 2 cups Warm Water (no hotter than 105 degrees F)
- 2 tbsp. Olive Oil
- Pumpkin Seeds, Chia Seeds, and/or Sunflower Seeds to top (optional)
Using a fork, mix the yeast and warm water together in a bowl. Let it stand for 4-5 minutes so it has a chance to bloom/froth.
In the mean time, add the flour, salt, and brown sugar to a large mixing bowl. Use a fork to mix everything together and break apart the brown sugar.
Slowly pour the yeast/water mixture into the dry ingredients and mix with a wooden spoon until combined.
Turn and lightly knead the dough on a floured surface for no longer than 5 minutes.
Grease a 9 x 5 x 2 1/2 inch loaf pan, set the dough inside and let rise in warm place for 20 minutes.
Preheat your oven to 400 degrees F. Score the top of your loaf with a sharp knife and bake for 25-30 minutes.
(The inside of the bread does cook all the way through, but it will remain moist and gooey. It is amazing toasted!!!)
