I love this kale salad because it is tender, tangy and oh-so-simple. With just five ingredients and an additional three for the dressing, there is no reason you can’t use up that kale shoved in the back of your refrigerator. I get it. We’ve all done it. Stocked up on kale, thinking we’d put it in our smoothies, add it to a soup recipe, or sneak it into some homemade fritters. 

My response to that is this:

Why are we always trying to hide kale? One cup of kale contains 206% of the daily value for vitamin A and 134% of the daily value for vitamin C. Leafy greens are a very concentrated source of micronutrients, which are important because their job is to support our body’s systems. Kale is a nutritional powerhouse and really is delicious, when prepared correctly. Do yourself a favor and don’t just hide it in your next pot of soup. Instead, make it the star of your meal.

Now, obviously, this girl is a huge fan of kale. Don’t believe me? I had a shirt a few years back that said, “Kale-ing it!” AND I wore it in public. So, there’s that for fandom. 

In case you are still having a hard time, thinking there is no way your kale could ever be tender and easy to chew, I’m asking you to trust me. Once you really get in there and massage the kale pieces with your fingers, the tough cellulose structure begins to break down. The texture becomes softer, the flavor becomes a bit more mild and it can be easier to digest. 

And this tender kale salad keeps so well, friends. It keeps in the refrigerator for days without losing it’s crunch or tang, making it a meal prep must-have! *This salad pairs well with pasta and Toasted Walnut & Spinach Pesto or with Sweet Potato Cakes.

I love this kale salad becuase it is tender, tangy and oh-so-simple. Better yet, it keeps in the refrigerator for days without losing it’s crunch or tang, making it a meal prep must-have!

Ingredients
Salad
  • 3 cups Kale, deveined and thinly sliced
  • 1.5 cups pre-cut Broccoli Slaw
  • 0.5 cups Green Onion, chopped
  • 0.25 cups Cilantro, chopped
  • 0.5 cups Almonds, chopped
Dressing
  • 0.25 cups Olive Oil
  • 1 Lemon, juiced *use 3/4 to all of the lemon juice depending on your preference or use ~ 3 tbsp. of juice
  • Salt to taste
Instructions
  1. Chop the kale, broccoli slaw, green onion, cilantro and almonds.

  2. Add the kale, broccoli slaw, green onion, cilantro and almonds to a large bowl and toss to combine.

  3. Pour the olive oil over everything in the large bowl.

  4. With clean hands, gently massage the olive oil into the ingredients. Be sure to work every piece of kale through your finger so it becomes tender and easy to chew.

  5. Add the lemon juice and salt to taste. Use anywhere from 3/4 to all of the lemon juice, depending on your preference.

  6. Toss gently to distribute the lemon juice and salt and add more salt if desired.

  7. Serve immediately or refrigerate for up to 3 days.
