HEALTHY SNACK ALERT! These Coconut Cashew Date Bites should be on your to-do list this afternoon.

Why? Because they are delicious, wholesome and addictively snack-able. I promise they will be gone by dinner time. These Coconut Cashew Date Bites are sweet, fiber-packed, nutty and nutritious. Plus, snack time doesn’t get easier than BLITZ ROLL EAT!

Think of them as a Larabar type goodie, but in cute, little bites that you can make at home with your blender or food processor. They taste so good, have a chunkier texture and a similar, simple ingredient list!

I’m always on the hunt for healthy snack ideas. Mamas, you feel me on this, right?! There is something about that late afternoon calm before the hangry storm. You now it is coming and you want to avoid it at all costs. Offering the little one(s) a filling, nutritious snack keeps their meltdowns to a minimum. Okay. Okay. Snacks keep my mood in check, too. 😉

Coconut Cashew Date Bites

Servings: 10 bites or so
Ingredients
  • 1/2 lbs. Pitted, Roughly Chopped Dates (about 15 whole dates)
  • 3/4 cups Whole, Unsalted Cashews
  • 1/4 tsp. Ground Cinnamon
  • 1/8 tsp. Sea Salt
  • 1/2 tsp. Vanilla Extract
  • 1/4 cup Unsweetened, Shredded Coconut
Instructions
  1. Remove the pits and discard.

  2. Roughly chop the dates.

  3. Measure out and set the coconut aside for rolling the finished bites.

  4. Add all ingredients (MINUS THE COCONUT) to your blender or food processor.

  5. Blend until relatively smooth or about 30 seconds-1 minute. Smooth enough to stick together, but still have some large chunks for texture.

  6. In 2 tablespoon portions (or your preferred size) roll the mixture into bite-sized balls.

  7. Roll each bite into the shredded coconut.

  8. Enjoy or store in the fridge for about 1 week.
